

When preparing mutton, cut the pieces into medium-sized, uniform portions so that they cook evenly and do not take unnecessarily long to become tender. After washing the meat, a small amount of lemon juice or vinegar can be applied and left aside briefly. This may help reduce the raw smell and support tenderization. However, lemon juice or vinegar should be used in moderation to avoid affecting the texture and taste of the meat.
For softer mutton, marinate it for at least 30 minutes with curd, salt, chilli powder, spices, and ginger-garlic paste. The acidity in curd can help tenderize the meat. Raw papaya paste is another useful tenderizer because its natural enzymes help break down proteins in the meat, making it softer and easier to cook. Use only a small quantity of papaya paste, as excessive amounts can make the meat overly soft.
