Bobbatlu, also known as Puran Poli, is one of the most popular traditional sweets prepared during festivals and special occasions in Telugu households. Made with a delicious filling of chana dal and jaggery, this sweet is loved for its soft texture and rich taste. To prepare bobbatlu at home, begin by combining one cup of wheat flour, one cup of all-purpose flour, a little salt and a tablespoon of ghee. Gradually add water and knead until the dough becomes soft and slightly sticky. Add another tablespoon of ghee, knead well and coat the dough with a little more ghee. Cover and allow it to rest for at least one hour. Meanwhile, wash one cup of chana dal, soak it for an hour and pressure-cook it with two cups of water for three whistles. Once cooked, drain the excess water completely and mash the dal into a smooth mixture.
Add one cup of grated jaggery to the mashed chana dal and cook the mixture over a medium flame, stirring continuously until it thickens. Allow the filling to cool before shaping it into small balls. Take a small portion of the rested dough, flatten it slightly and place a filling ball in the centre. Seal the edges carefully to prevent the filling from coming out. Apply a little ghee to butter paper and gently flatten the stuffed dough into a thin bobbatlu. Heat a griddle over a medium flame and carefully transfer the prepared bobbatlu onto it. Remove the butter paper and cook both sides, applying ghee until they turn golden brown. Following these simple steps helps prepare soft, flavourful and delicious traditional bobbatlu at home, making them a perfect festive treat for the entire family.
