

In earlier days, farmers used to prepare a simple chutney without using a stove or oil before heading to the fields. Known as “Polam Pachadi,” this traditional recipe is made quickly with minimal ingredients and pairs perfectly with rice or tiffins. It is healthy, natural, and full of authentic rural flavors.
To prepare, clean green chilies and chop onions, soaking them in water to reduce pungency. Using a mortar and pestle, crush cumin seeds first, then add soaked tamarind, garlic, and salt. Grind until smooth, then add green chilies and onions gradually, keeping a coarse texture. This chutney tastes best when prepared traditionally but can also be made in a mixer.
