

To prepare this flavorful and nutritious powder, take one cup of black sesame seeds, one cup of urad dal, and a quarter cup of chana dal. Add one tablespoon each of coriander seeds and cumin seeds, two tablespoons of black pepper, 10 garlic cloves, a few curry leaves, 10 dried red chilies, a small piece of tamarind, and salt to taste. Lightly roast half a tablespoon of coriander seeds, half a tablespoon of cumin seeds, four peppercorns, and four dried red chilies. Do not over-roast, as it may turn bitter. Add curry leaves and roast until moisture evaporates. Frying garlic also helps increase shelf life.
Once all ingredients cool down, grind the roasted spices first into a coarse powder. Then add the dals, sesame seeds, curry leaves, garlic, tamarind, and salt, and grind to a slightly coarse texture, not too fine. This powder tastes delicious when mixed with hot rice and ghee. It also pairs well with idli, dosa, ragi sangati, and jowar roti. Black sesame seeds are rich in calcium and iron, while curry leaves and pepper aid in improving digestion.
