

A traditional Andhra-style spicy green chili chutney can be prepared using simple ingredients like 10 green chilies, garlic cloves, tamarind, salt, cumin seeds, oil, mustard seeds, urad dal, red chilies, and curry leaves. First, wash and chop the green chilies and soak tamarind in water for about 10 minutes. Heat oil in a pan and fry the green chilies on medium flame until they become soft. In another pan, roast cumin seeds and let them cool.
Next, grind the fried green chilies along with roasted cumin, garlic, tamarind, and salt into a slightly coarse paste or smooth consistency as preferred. Finally, prepare a tempering with oil, mustard seeds, urad dal, cumin seeds, red chilies, and curry leaves, and pour it over the chutney. This hot and flavorful green chili chutney is ready to serve and pairs well with rice or dosa.
