

Leftover coconut, especially from festive occasions, need not go to waste. It can be transformed into a delicious fresh coconut kofta curry that pairs wonderfully with rice, bagara rice, roti, chapati, pulao and phulka. It is particularly delicious with roti. To prepare the gravy, soak tamarind and extract a thick pulp. Separately roast sesame seeds, cumin, fenugreek and coriander seeds, grind them into a powder and prepare a smooth masala paste with fried onions, ginger and garlic.
For the koftas, grind fresh coconut and combine it with gram flour, coriander powder, garam masala, turmeric, chilli powder, salt and ginger-garlic paste. Shape the mixture into small balls and steam them for around 15 minutes. Prepare a tempering with oil, fenugreek, cumin, curry leaves and coriander, then sauté the prepared masala paste until the oil separates. Add tamarind extract and water to make the gravy. Once it boils, gently add the steamed koftas and cook for another five minutes. Garnish with coriander and serve hot.
