

Egg Garlic Pickle is a delicious and spicy homemade recipe prepared using boiled eggs, garlic paste, red chilies, and aromatic spices. First, boil the eggs, peel them, and ensure there is no moisture. Dry roast coriander seeds, cumin, fenugreek, and red chilies, then grind them into a fine powder. Mix egg pieces with salt, turmeric, and tamarind, and prepare a coarse mixture. Fry garlic cloves in oil until golden and keep aside.
In the same oil, lightly fry the eggs with small cuts for about 10 minutes. Heat the remaining oil, let it cool, and then mix it with the prepared spice powder, fried garlic, and eggs. Finally, add mustard seeds and curry leaves, mix well, and store in a dry glass jar. Ensure no moisture for longer shelf life. Refrigeration helps preserve it up to 30 days, and the taste enhances after two to three days.
