

A wholesome and traditional Atukulu Payasam can be prepared using flattened rice, moong dal, jaggery, milk, coconut, and dry fruits. Begin by dry roasting moong dal on a medium flame until it releases a rich aroma. Cook the roasted dal thoroughly in a pressure cooker or a deep vessel until soft. Meanwhile, wash the flattened rice and soak it for about five minutes, ensuring it does not become overly soft or mushy.
In a separate pan, dissolve jaggery in water and strain to remove impurities. Add the cooked moong dal and soaked flattened rice to the jaggery syrup and mix well. Allow the mixture to simmer for five minutes so the flavors blend perfectly. Finally, add milk, cardamom powder, ghee-roasted cashews, raisins, and grated coconut. Stir well and cook briefly to achieve a rich, flavorful payasam ready to serve.
