

Methi (fenugreek leaves) vadas are a delicious and crispy snack perfect for evenings. To prepare, take a bunch of fresh methi leaves, one cup of gram flour, a quarter cup of rice flour, one chopped onion, four green chilies, a small piece of ginger, and a few curry leaves. Add one tablespoon of cumin seeds, one tablespoon of red chili powder, salt to taste, and enough oil for deep frying. Clean the methi leaves thoroughly and mix them in a bowl with chopped onions, green chilies, ginger paste, and curry leaves. Add gram flour, rice flour, cumin seeds, chili powder, and salt, then mix everything well, sprinkling a little water if needed to form a thick batter.
Heat oil in a pan and shape the mixture into small vadas. Fry them on medium heat until they turn golden brown on both sides. Once fried, remove them and place on tissue paper to absorb excess oil. These crispy methi vadas taste best when served hot and pair wonderfully with peanut chutney or coconut chutney, making them an irresistible snack for any occasion.
