

Curry leaves garlic spice powder is a widely loved dish in both Telugu states and needs no special introduction. Prepared using fresh curry leaves, garlic, and dried red chilies, this flavorful mix is not only tasty but also offers several health benefits. To prepare this recipe, you need one cup of curry leaves, 10 garlic cloves, 15 dried red chilies, two tablespoons each of chana dal and urad dal, one tablespoon each of cumin seeds and coriander seeds, a few extra curry leaves, salt to taste, and one tablespoon of oil.
To make the spice powder, heat oil in a pan and fry the curry leaves until crisp. Add chana dal and urad dal and roast until golden brown. Then add coriander seeds, cumin seeds, and dried red chilies, roasting them on medium flame until aromatic. Once cooled, grind the mixture coarsely. Finally, add fresh curry leaves, garlic cloves, and salt, and grind again to a slightly coarse texture without making it too smooth. This simple yet delicious powder can enhance any meal while also providing nutritional benefits.
