

Ippapoolu Kudumulu is one of the traditional recipes passed down through generations. The sweet dumplings are prepared using dried mahua flowers, fresh grated coconut and jaggery. The dried flowers are coarsely ground and cooked in a pan along with coconut, grated jaggery and a little water for 5–6 minutes. Once the jaggery melts, the mixture is cooked on low heat until it reaches a thick, mouldable consistency and is then set aside.
For the outer layer, water is boiled in a pan and a small amount of rock sugar powder or sugar is added, followed by rice flour. After mixing well, the stove is switched off and the mixture is covered for about 10 minutes. Once warm enough to handle, the dough is kneaded and divided into small portions. Each portion is flattened, filled with the prepared mahua-coconut mixture and sealed carefully. The dumplings are then placed in greased idli plates and steamed on low heat for around 20 minutes. Mahua flowers are traditionally associated with various health benefits, but the dish should not be considered a substitute for medical treatment.
