Jowar roti, prepared using sorghum flour, is a nutritious option that can be included in a balanced diet. To make a flavourful version at home, take two cups of jowar flour and add finely chopped onion, green chillies, curry leaves, coriander leaves, cumin seeds, crushed roasted peanuts and soaked chana dal. Mix in ginger-garlic paste, salt, chilli powder, a little turmeric and roasted sesame seeds. Gradually add about one cup of hot water while mixing the ingredients with a spoon. Once the mixture cools slightly, knead it for around five minutes until it becomes soft and easy to shape. Allow the dough to rest for ten minutes before preparing the rotis.
Take a portion of the dough and flatten it into a medium-thick roti using lightly oiled butter paper or a clean, damp cloth. Heat a pan, spread a little oil and cook the roti on both sides over a medium flame until properly done. The finished roti is crisp on the outside and soft inside, with added flavour from peanuts, sesame seeds and spices. Jowar contains dietary fibre and can be part of a balanced eating plan. However, people with diabetes should not assume that eating jowar roti alone will control blood sugar levels. Portion size, accompanying foods and individual dietary requirements should also be considered, with medical advice where necessary.
