Coconut can be used to prepare a variety of delicious dishes, and coconut junnu is one such sweet treat that can be made easily at home. The recipe requires two cups of fresh coconut pieces, two cups of water, half a cup of sugar, four tablespoons of cornflour and half a teaspoon of cardamom powder. To begin, grind the coconut pieces in a mixer without adding water. Then, add the water and grind again until the mixture becomes smooth. Strain it through a fine sieve or a thin cloth to extract the coconut milk. Take a small portion of the milk in a separate bowl, add the cornflour and mix thoroughly until no lumps remain.
Next, heat the remaining coconut milk in a pan and add the sugar, stirring until it dissolves. Add the prepared cornflour mixture and cook over a low flame, stirring continuously to prevent it from sticking to the bottom. The mixture should thicken in about four to five minutes. Add cardamom powder if desired, then switch off the heat. Transfer the mixture to a glass or steel bowl and allow it to cool completely. Refrigerate for one and a half to two hours until it sets. Once firm, carefully transfer it to a plate and cut it into pieces. Garnish with mint leaves or dry fruits before serving. This simple recipe offers an easy way to prepare delicious coconut junnu at home using a few basic ingredients.
