A great alternative to regular dosa is green gram dosa, made using moong dal. This protein-rich dish is soft, spongy, and easy to digest. Adding ginger and green chilies enhances both taste and health benefits, especially during the rainy season.
To prepare, soak two cups of green gram for six hours, then grind it with ginger, green chilies, cumin seeds, and water into a slightly coarse batter. Add salt, chopped coriander, and curd, and let it rest for an hour. Just before cooking, mix in baking soda for a fluffy texture. Heat a pan, pour the batter slightly thick, and cook on both sides with a little oil or ghee. Serve hot with coconut, ginger, or peanut chutney for a wholesome breakfast.
